SORBET, APPLE

Delicious with our Scandinavian Apple Soup or anywhere you might use apple sauce.

Ingredients:

  • 2 cups apple juice or apple cider

  • 3 Granny Smith apples (1 1/2 pounds), peeled, diced 1/2 inch
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cardamom
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons sugar

Method:

Combine all ingredients and simmer, uncovered 8-10 minutes, or until apples are tender. Strain through fine seive. Add half of the solids back to strained mixture and puree in a blender or food processor. Chill until cold, then freeze in ice cream maker according to machine directions. Hold frozen in air tight containerĀ until needed.
