AVOCADO TOMATILLO SALSA

This is a popular recipe – make sure you end up with at least 50% avocados in the mix.

Ingredients:

  • 2 Serrano chilies

  • 10 each tomatillos, cleaned
  • 2 cloves garlic
  • 1 Tablespoons white vinegar
  • 1 teaspoon sea salt
  • ½ cup cilantro, chopped
  • 2 avocado, diced
  • ½ cup white onion, minced
  • As desired, sea salt, ground pepper, ground coriander

Method:

Place chilies in water and bring to boil and cook for 5 minutes. Add tomatillos and cook an additional 3-5 minutes; drain and place in blender with garlic and vinegar – puree. Remove to a medium bowl and add salt, cilantro, avocado and onion. Adjust seasonings and serve.
