AVOCADO TOMATILLO SALSA

This is a popular recipe because it goes with everything.

Ingredients:

  • 2 Serrano chilies

  • 10 each tomatillos, cleaned
  • 2 cloves garlic
  • 1 tablespoons white vinegar
  • 1 teaspoon sea salt
  • 1/2 cup cilantro, chopped
  • 2-4 (depending on size and taste) avocado, diced

Method:

In sauce pan, place chilies in water and bring to boil; cook 5 minutes. Add cleaned tomatillos; cook 3-5 more minutes. Drain and cool slightly before placing into blender or food processor to blend with garlic and vinegar into puree. Remove to medium bowl and add salt, cilantro, avocado and onion. Blend. Season with salt if needed. Serve. Will keep well covered about 2 days.
