BABY ARTICHOKE HEARTS

Ingredients:

  • 4-8 artichokes, baby (before the prickly tough outer leaves develop), cleaned, cut and choke removed

  • salt
  • EVOO
  • 1-2 Lemons

Method:

To remove choke, slice in half through stem. Remove choke in center using tip of paring knife. Rub with cut lemon, turn over and remove leaves and peel stem. Place artichokes into lemon water if not cooking immediately. Bring 2 quarts water plus 1 1/2 tablespoon salt to boil. Drop in 3-4 lemon wedges. Drop in prepared artichokes and cook till tender about 10 minutes. Remove and  dress with EVOO. Serve warm or cold.

For grilling, place marinated chokcs onto heated grill to mark and caramelize. Remove and toss with more vinaigrette or additional EVOO. Adjust seasoning.
