• 3 very ripe bananas

  • ½ cup honey
  • 3 tablespoons canola oil, plus a little more for oiling pan*
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups whole-wheat pastry flour
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon salt
  • ¾ cup chopped walnuts or pecans
  • * May use melted butter if desired


Lightly oil muffin top pans or cupcake pans or 9″ layer cake pan or loaf pan. Mash the bananas with the honey, oil and vanilla. Set aside. Stir together the dry ingredients and add the nuts to the flour mixture. Blend the flour mixture into banana mixture gently just to moisten dry ingredients. Spoon into desired pan. Bake for 15 – 20 minutes for muffin tops or cupcakes; 25-35 minutes for layers and 35-40 minutes for loaf. (Timing may vary according to oven and size of pan)
