BARBEQUE SAUCE

Ingredients:

  • 4 tablespoons EVOO

  • 1 bulb (head) of garlic, mashed
  • 1 cup cider vinegar
  • 1/2 cup soy sauce
  • 2 cups ketchup
  • 1 cup brown sugar
  • 1 teaspoon dry mustard
  • 1 Tablespoon instant espresso powder
  • Sea salt and pepper, as needed to season
  • 28 oz san marzano tomatoes
  • 1 1/2 teaspoons of Flavors of Southern Spain blend

Method:

Place a medium sauce pan over moderate high heat and add the EVOO. Add garlic and gently saute until becomes aromatic and slightly brown. Add cider vinegar, soy sauce, ketchup and brown sugar. Stir to dissolve sugar. Add a pinch of sea salt and all of the coffee. Bring to simmer for 10 minutes and then adjust seasoning.
