Whether you choose baby beets or fully mature beets, roasting can intensify the flavors and earthiness of beets. To bring out the freshness of baby beets, Bob often adds an orange infused EVOO just before serving, and a little more salt & coriander.

Ingredients:

  • 2-4 beets

  • olive oil
  • sea salt, coriander, pepper to taste

Method:

Wash beets thoroughly. Dry. Lightly oil with EVOO and season with sea salt, coriander and pepper. Place into roasting dish. Cover. Bake at 375F for 25-60 minutes depending upon size. They should be fork tender. Cool to touch but not completely. Peeling is much harder if you wait until beets are completely cooled. Rub-peel off the skin using paper towel. Beets are ready to serve or for next use.
