BERRIES, Vinegar Bath for better shelf life

By:

To clean and lengthen shelf life of Strawberries, blueberries, black berries, raspberries, use this recipe when you bring berries home from the store. See note for picked wild berries.
Depending on the quantity use the following ratios:
For 4 small or 2 large clam shells of berries: 1 cup vinegar to 4 cups water
For 2 small clam shells or 1 larger one:  1/2 cup vinegar to 2 cups water
For 1 small clam shell berries: 1/4 cup vinegar to 1 cup water

Swish gentle with fingers. Leave only 5 – 10 minutes. Carefully drain in colander. Rinse in cool water. Place in single layer onto sheet pan with sides and covered with paper towel. Lightly cover with damp paper towel. Refrigerate.

Note: For wild berries, you may soak in salted water 1:2 ratio to remove any critters or larvae that may be in them.  Dissolve the salt in warm water. Cool before using with berries. So say this also removes chemical pesticides from berries that are not organic. We wouldn’t take a chance and buy or pick only the organic berries.
