BLACK GRAPES & OLIVES IN SABA

Saba is made from grape juice, seeds and skins, also known as “must,” and is greatly reduced to thicken into a syrupy consistency. It adds a sweet earthy flavor that is rich with antioxidants. It is not alcoholic. Use sparingly as it can be very sweet. If unable to get it replace it in the recipe with reduced balsamic vinegar, but use less than half the amount.

Ingredients:

  • 2 cups black grapes, washed and whole

  • 1-2 Tablespoons EVOO
  • Salt, pepper and coriander to taste
  • 1/2 cup olives, black oil cured, Kalamata or other brined pitted olive
  • 1-3 Tablespoons SABA (*)
  • orange zest, to garnish, if desired

Method:

Toss grapes in EVOO to lightly coat; season as desired with salt pepper coriander. Place on sided cookie sheet and roast in 400F oven for 15-20 minutes or until grapes start to pop and blister. Remove and toss with olives. Return to oven for 4-5 minutes just to meld flavors. Toss in zest if using. Serve warm.

(*)Be sure to taste the grapes and adjust amount of SABA accordingly. If grapes are sweet use less SABA.
