QUICK ALFREDO,BLEU CHEESE OR TALEGGIO CHEESE

This makes a nice sauce for a steak as well as base of a grilled pizzette, as served at our MARKET DINNER SHOW 8-7, 8-8-12, and for our wood fired pizzas on “POP UP” pizza days.

 

Ingredients:

  • 2 cup heavy cream, reduced by half

    2 ounce bleu cheese, crumbled

    Optional: If using as a sauce, add 1 tablespoon chopped chives and serve

Method:

Blend cream and bleu cheese over medium heat till combined. Season to taste with salt, pepper, ground coriander. Do not simmer or reduce after cheese is incorporated.

We make this recipe for Taleggio cheese alfredo for our pizza base sauce. It is also good with ravioli and other pasta. Make as directed here. Avoid boiling and remove from heat and serve as soon as cheese is incorporated.
