BLUEBERRY CORIANDER OATMEAL COOKIE COBBLER

Though this requires you to make two recipes, when done, you have two results! Using Bob’s popular Coriander Oatmeal Cookie, we give you a way to make a really quick dessert cobbler. The cookie is frozen in dough balls, so you can pull them out and bake as needed. You can also pull out to dot the top of this berry recipe to make a unique cobbler.

Ingredients:

  • 1 cup sugar

  • 2 tablespoons plus 2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 10 cups berries (blue, black, raspberry, huckleberry, or combination), cleaned and well sorted
  • 1 teaspoon vanilla
  • 1 tablespoon butter, cold
  • 1 recipe of coriander oatmeal cookies

Method:

Blend sugar, cornstarch, salt and cinnamon. Toss with the berries; add vanilla. Place mixture into oven-able dishes for individual servings (china tea cups work well) or place into casserole dish. Dot with small amount of butter if desired and top with dime size pieces of the coriander oatmeal cookie dough.

Bake 375º F for about 20-30 minutes. Cool and serve warm for best flavor with Bob’s vanilla yogurt ice cream.
