BUSTIATE PASTA WITH SARDINES

Ingredients:

  • 1 pound busiate pasta, see recipe
  • 1 1/2 pounds sardines
  • 1 pound fennel, small chop,
  • 1 onion, chopped
  • 2 tablespoons pine nuts
  • 2 tablespoons raisins
  • 3 ounce anchovies
  • 5 tablespoons EVOO
  • 3 Tablespoons dry white wine
  • Salt pepper coriander to taste
  • 1/2 ounce saffron, dissolved in cup of vegetable broth

Method:

Bone rinse and flake the sardines. Saute  onion until brown in some EVOO; add anchovies until dissolved. Add fennel, pine nuts, raisins and sardines. Sprinkle with white wine and simmer until dry. Add dissolved saffron liquid. Adjust seasonings. simmer covered about 20 minutes. Cook paste, al dente,  in salty water. Drain. Mix with the sauce and rest for 10 minutes before serving.
