SOUR CHERRY SPRITZER, CHILLED

As seen in our July 2013 Dinner Show. This is made with pie cherries!

Ingredients:

  • 2 1/2 cups pie cherries, about a pound

  • 1-2 Tablespoons lemon juice
  • 1 cup sugar
  • 1 cup water
  • pinch of salt
  • 1 -2 teaspoons vanilla
  • 1 bottle Proseco or other dry sparkling wine
  • 1 cup softly whipped cream, for floating on top

Method:

Clean cherries, check for pits, and set aside
Bring lemon juice water and sugar to boil in small sauce pan and simmer for about 5 minutes or until it becomes syrupy. At this point remove from heat;  add salt and vanilla and cherries; stir.  No further cooking is needed at this time. Store in the refrigerator until needed.

For spritzer, remove some compote and place about a teaspoon into the bottom of a small shot glass or a tablespoon in a martini class. Pour a sparkling wine over them to about 1/2 inch below the glass rim, being careful not to mix the wine with the cherries. Next float a small amount of softly whipped cream (unsweetened) on top of the sparkling. Serve immediately. Some might say this is the adult Shirley Temple.
