CHIVE CRUSTED RACK OF LAMB

Ingredients:

  • 1 ea rack of lamb

  • As needed egg whites, whisked
  • ¼ tsp sea salt
  • ¼ tsp ground coriander
  • ¼ tsp ground pepper
  • ¼ cup chives, minced
  • ¼ cup parsley, minced

Method:

Method: clean the rack of all senue and brush with egg whites; season and top with chives/parsley – reserve; place in pre-heated oven at 400F for 20 – 25 minutes or until internal temperature reaches 130ºF.



Ingredients:

  • TAPENADE

  • 1 cup spiced black olives, or mix, chopped
  • 2 TBS shallots, finely minced
  • ½ each red bell pepper, minced
  • ¼ cup cilantro, chopped    1 ea lemon, zested
  • 2 cloves garlic, paste
  • 1 tsp ground coriander
  • ½ tsp ground mustard
  • ¼ cup EVOO
  • 2 anchovy filets, paste

Method:

Method:  combine ingredients into food processor and pulse to create and slightly pureed mixture – refrigerate until needed.
