CHIVE PANCAKES WITH RICOTTA CHEESE

Ingredients:

  • 3 ounce cream cheese

  • 16 ounce ricotta cheese
  • 3 each egg yolks
  • ½ teaspoon salt
  • 2 Tablespoon sugar
  • ¾ cup AP flour
  • ¼ cup wheat flour

    1 tablespoon chives, fine chop

    3 each egg whites

Method:

Cream cheeses with yolks; cream in salt and sugar; fold in flours and chives in three intervals; whisk whites until frothy and fold into mixture; hold for service.
