CHOCOLATE WAFER COOKIEY CRUMB CRUST

Just for a change, try this crumb crust for your next pumpkin pie!

Ingredients:

  • 1 1/2 cups chocolate cookie crumbs (about 6-7 ounces)

  • 2 1/2 ounces melted butter
  • Dash of salt
  • 2 tablespoons sugar, optional
  • 1/2 teaspoon vanilla

Method:

Combine all ingredients in mixing bowl. Combine until all the crumbs are moistened with the butter and clump together. Place 2-3 tablespoons in each of 12 tart pans and press firmly to create a bottom and side crust. Set crust in the 350ºF oven for 5 minutes before filling or, fill immediately with filling that requires further baking.

Chef Note: You may purchase the wafer cookies or make your own. Oreo cookies without the filling also work.
