CILANTRO LIME COMPOUND BUTTER

Ingredients:

  • 1 pound butter, softened

  • zest from 3 limes
  • juice from one lime
  • leaves from 1/2 bunch cilantro, torn

Method:

Blend butter, zest, juice and cilantro to a smooth mixture. Turn out onto a piece of parchment or waxed paper and roll into 2″ diameter log. Wrap in foil and freeze solid. At service, cut off what you need and return remaining log to the freezer.
