COCOA NIB BRITTLE

By themselves, cocoa nibs seem just crunchy! When added to hot molten sugar they become sweet and crunchy chocolate goodness!

Ingredients:

  • 2 cups sugar

  • ¼ cup water
  • ½ cup cocoa nibs
  • Dash sea salt
  • (Nuts may be added, see method)

Method:

Combine sugar and water in a medium saucepan; bring to a boil over high heat, covered tightly with a curved lid.  Cook for approximately 7 minutes before removing lid to prevent crystallization of sugar.  The mixture, at this point should be slightly golden in color; continue cooking until amber in color. Add nuts, if using, & stir to coat. Remove from heat and add nibs. Pour onto silicone lined sheet pan.  Cool completely for service.
