COCONUT SLICED ALMOND BRITTLE

Ingredients:

  • 2 cups sugar

  • 1/4 cup water
  • 1/2 cup unsweetened coconut
  • 1/2 cup sliced almonds
  • dash sea salt

     

Method:

Combine sugar and water in medium skillet (heavy bottom stainless works best). Bring to boil over high heat; The mixture will start to turn golden color and should continue to cook until amber, like a shiny copper penny. Add coconut and nuts and stir to coat. Remove from heat spread onto silicone lined cookie sheet. Cool completely before touching and breaking into pieces.

Alternative: sprinkle flaky sea salt onto brittle after spreading onto silicon before it cools.
