CONFIT OF SQUID

Ingredients:

  • As needed EVOO

  • 1 cup squid, cut into rings
  • 3 cloves garlic, sliced
  • ½ lemon
  • 1 Tablespoon parsley, minced
  • ToTaste sea salt and coriander
  • 3 cups EVOO

Method:

Combine all ingredients except EVOO and marinade under refrigeration for 1 hour.Place in EVOO in a medium saucepan; heat slowly on medium and cook until tender, approximately 15 minutes; cool in oil and reserve for service.
