What’s the difference between gelato and ice cream? A question that is answered differently depending who you ask. What we think makes the difference mainly is that gelato is made with milk and ice cream is made with cream. Recipe below does have cream in it but much less than our typical ice cream, and we often even add sour cream.  The goal is to make a smooth gelato with intense flavor and fewer fat calories.

Ingredients:

  • 2 cups milk

  • 1 cup cream
  • 4 egg yolks
  • 1 cup sugar
  • pinch of salt
  • 3 tablespoons coriander, freshly ground.

Method:

In a heavy sauce pan, combine milk and cream and place over low heat. In separate container whisk egg yolks and sugar until frothy. Add a small amount of the warm milks and whisk to temper eggs. Add egg mixture to the milk pot and add pinch of salt and coriander. Cook slowly over medium heat until mixture begins to thicken.  Remove from the heat and cool in refrigerator for up to 24 hours or at minimum 4 hours to meld flavors. Strain out cracked coriander seeds before putting into ice cream maker. Follow  machine directions for freezing.
