CORN SALSA

Ingredients and Method:
4 ears corn, grilled just to char slightly; take off cob, and cooled
1 jalapeno, grilled, seeded, minced, cooled
1 small red seeded bell pepper, diced, cooled
1 small red onion (sprout-out), grilled, diced, cooled
1 fresh tomato, diced
Place all of the above in bowl. Add
Blend together and add:
1 lime, juiced
2 tablespoons avocado oil (or olive oil)
1 teaspoon salt, 1/2 teaspoon coriander, Few grinds black pepper
Toss to cover corn mixture; garish with
1/4 cup cilantro leaves, (stems removed), whole

Optional addition: In season cherry tomatoes cut in half and added just before serving.
