Tomato watermelon salad with crab & roasted fresh corn atop tenderloin steak

It doesn’t take very much in season Dungeness crab to dress up a dish. The addition to butter basted tenderloin steaks, for example.

INGREDIENTS:
1/2 pound cleaned crab
2 tablespoons shallots, minced
2 tablespoons EVOO
1 tablespoon chives, minced
1 ear corn, grilled or charred on open burner, remove corn from cob, hold warm
METHOD:
Combine all ingredients, tossing well. Place large spoonful of mixture on the top of grilled steak or butter basted pan-seared steaks. Goes well with Béarnaise Sauce during fresh tarragon season.
