CROTIN (CHEVRE) for SALAD

Ingredients:

  • 2 ounce goat cheese

  • 2 ounce cream cheese
  • ½ cup AP flour
  • 2 eggs
  • ½ cup panko
  • 1 teaspoon coriander, ground
  • 2 cups vegetable oil

Method:

Cream cheeses together and form into ½ oz disks; bread by first dredging in flour, then coating in whisked eggs and finishing with panko mixed with coriander; lay on a parchment line sheet pan; refrigerate for 30 minutes; fry in heated oil until golden brown; remove to paper and blot dry; refrigerate until needed for service. At service, place in 400ºF oven for approximately 4 – 5 minutes to heat through and crisp. Serve with crisp arugula greens, marcona almonds and olives for a unique salad.
