EGG WASH

Ingredients:

  • 1 egg, slightly scrambled

  • 2 tablespoons water (or milk)

Method:

Blend together and use on top of pastry to give the finish baked product shine and browning. Milk alone may also do this. It must be used sparingly on pie crust so as not to add moister and toughen the crust.Sprinkle on some sugar before putting into oven for even more character on sweet pastry.
