FILET OF BEEF (PERUVIAN)

Ingredients:

  • Marinade:

  • 1/3 cup soy sauce
  • 2 Tablespoons lime juice
  • 5 garlic cloves, paste
  • 1 Tablespoon cumin
  • 1 Tablespoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 2 Tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 2 Tablespoon cilantro leaves

    6 each 4-5 ounce beef filets

  • 3 Tablespoons chives, minced

Method:

Combine ingredients except beef in a blender and pulse to blend. Place marinade in Ziploc bag and add beef fillets to  marinade in the bag for 30 minutes.
Remove to parchment lined sheet pan for 15 minutes. Meanwhile heat grill and brush with vegetable oil; place filet on grill and cook for 3 minutes; turn and finish cooking for an additional 1-2 minutes or to desired temperature; remove and serve garnished with chives.
