FIVE SPICE DUCK CONFIT

Ingredients:

  • 1 tablespoon sea salt

  • 1 teaspoon ground coriander
  • 2 teaspoons five-spice powder
  • 2 each duck legs
  • 2 cups duck fat or other fat as desired

Method:

Combine seasonings; rub generously over both sides of duck legs; place in roasting pan and cover with vegetable oil. Bring to a simmer on top of stove; cover with parchment and foil and place into 300ºF convection oven for  approximately 2 hours or until duck pulls away from the bone. Remove from oil and cool, reserving fat for other culinary use.
