FRESH FRUIT MASCARPONE TARTS

Ingredients
1/2 cup (2 oz) white chocolate chips
1/4 cup heavy cream
1 teaspoon grated lime zest
7 teaspoons lime juice
pinch salt
3/4 cup (6 oz) mascarpone cheese, room temperature
20 oz berries
1/3 cup apricot perserves, warm and thinned slightly (optional-if fruit that needs sweetening)

Method
Prepare tart shells; cool.
Microwave chips, lime zest and salt in bowl, stirring ever 10 seconds until baking chips are melted, 30-60 seconds.
Whisk in a third of the mascarpone, then whisk in lime juice and the remaining mascarpone, whisking until smooth. Transfer filling to tart shell(s) and smooth to even layer.
Decorate top of tart with fresh berries. Coat with preserves if using. Serve immediately with softly whipped cream.
