FRIED TORTILLA FOR TOSTADA

To prepare Tostada shells

INGREDIENTS:

one 6″ tortilla for each tostada
some extra tortillas for making fried tortilla confetti
high smoke point oil for frying, such as grapeseed, avocado, coconut
salt, for seasoning

METHOD:
In a heavy bottom 12″ fry pan, place enough oil to be 1/2 inch deep. Bring up to 350°F. Float tortillas, two at a time, in the oil; turning continually until golden brown. Place spatula on top of any that puff up. Check oil temp if this happens as it typically indicates oil is too hot. Place golden brown tortillas on rack. Salt and allow to cool.
Proceed with either a tostada stack or a single tostada base.

To make tostada confetti, cut the extra tortillas into matchstick lengths. Then in same oil at 350°F. cook about a cup at a time until golden brown. Remove to paper towel lined sheet pan to drain and to salt.
