Garlic smothered miatake mushrooms

Ingredients:

1 lb. mushrooms, your choice single variety or blend or 2 or 3 different kinds

EVOO, as needed

Salt, Pepper,  Coriander

Method:

Clean mushrooms; spin dry or towel blot dry

Lightly coat with EVOO

Lightly season with Salt, Pepper, Coriander

Bake in preheated oven at 500 °F for 12 minutes. Check for doneness to your liking. Add time if you what additional browning.

Check seasoning and add if needed. Toss in pan roasted garlic and chopped parsley. Serve immediately.

PAN ROASTED GARLIC

Ingredients:

1 head garlic, cleaned, sliced

1/4 cup EVOO

As needed sea salt, ground coriander and pepper

4 Tablespoons parsley, chopped

Combine garlic and oil in a small sauté pan on medium low heat. Cook until golden brown. Remove and toss with mushrooms and parsley.
