GOAT CHEESE CREMA

This makes a very nice condiment on a fruit dessert or for a cheese course, as we did in September Dinner Show 2014.

Ingredients:

  • 1/2 cup heavy cream, whipped
  • 1 1/2 tablespoon (4 1/2 teaspoons) agave
  • 1 cup mild goat cheese, whipped to soften

Method:

Whip the cream; set aside till needed. Soften the goat cheese in mixer; add agave. Fold the whipped cream into the goat cheese and agave. When blended, serve or hold in the refrigerator. Bring out 30 minutes before serving.
