BLINTZ, WITH GOAT CHEESE FILLING

Serve these with Baba Ghanoush, Cilantro pesto, and Balsamic tomatoes and always good for Brunch.

Ingredients:

  • 4 ounce goat cheese, feta, or cream cheese

  • 1 ounce ricotta cheese
  • 1 Tablespoons salted butter
  • 2-3 teaspoon dill
  • ¼ to ½ teaspoon lemon zest
  • As needed sea salt and coriander

Method:

Cream goat cheese, ricotta and butter in a mixer with a paddle; add dill, zest, and seasonings.
Place approximately 2 ½ ounces filling in the center of each crepe; fold over and under each side to form blintz, square pillow shapes. Reserve on buttered pan or parchment lined pan for service.
