GREEN BEANS WITH CARAMELIZED ONION CREAM

Ingredients:

  • 3 Tablespoons rendered duck fat

  • 1 cup onions, minced
  • 3 cups wild mushrooms, picked
  • ½ cup reduced heavy cream
  • 2 cups green beans, blanched
  • 1 Tablespoons each tarragon and Italian parsley, minced
  • As needed salt, pepper and coriander
  • 4 Tablespoons hazelnuts, toasted, optional

Method:

Place fat in a medium sauté pan and heat to almost smoking; add onions and cook to caramelize; add mushrooms and leave a moment to heat through; add cream and heat through; toss in beans and herbs, heating through; add seasonings and serve with toasted hazelnuts.
