KETCHUP

INGREDIENTS
1 medium onion, chopped
2 tablespoons garlic pasted
1/4 cup natural sugar or maple syrup *see note
3/4 cup apple cider vinegar
1 teaspoon cinnamon
1 teaspoon Flavors of the Sea spice blend
1/2 teaspoon Allspice
1 teaspoon salt
28 ounce can San Marzano tomatoes (or similar)
1 teaspoon smoked paprika, optional**
1-2 teaspoon Sambal Oleek, optional (spicy)***

METHOD:
Saute garlic paste and onion together over medium heat, until wilted and aromatic, not browned. Blend all spices, and paprika, if using, with half the sugar. Add this to the onion mixture with apple cider vinegar. Cook to reduce liquid by 1/2. Add the canned tomatoes. Reduce temperature to simmer and cook 30 minutes. Taste and adjust seasonings. And add spicy sauce if using.
*Chef Note: The sweetness provided by the onion varies, so you use only half specified sugar until the mixture is almost done. Taste and adjust with either more sugar or salt at that time.
** Smoky paprika creates a smoky flavor and changes the batch from fruity to smoky. Acquired taste for some.
***A purchased prepared hot sauce may be added to make fruity tomato ketchup more spicy instead of adding hot peppers.
