LEEKS, OVEN BRAISED IN BUTTER AND WINE

As we did in our FRESH MARKET show, these leeks make a nice side dish especially in the spring and summer when they are so very fresh. IMG_2459

Ingredients:

  • 1 pound leeks, split in half lengthwise and thoroughly cleaned
  • 4 ounces butter
  • 1 cup white wine
  • 1 cup water
  • Salt, pepper, coriander, to taste

Method:

Carefully clean the leeks without loosing their shape. In sauce pan melt butter with wine and water and lay leeks on top in  in a single layer. Salt pepper coriander to taste. Cover with parchment, loosely with steam vent slit in middle.  Place in 325°F oven for 45 minutes.  Serve immediately. Leeks should be creamy and melted but still hold their shape.
