PEAS,MINTED WITH NEW POTATOES

Ingredients:

  • 1# new potatoes, size c

  • 1 1/3 cup salt
  • 1 gallon water

    ¼ cup EVOO

  • ½ tsp ground pepper
  • ½ tsp ground coriander
  • ¼# shucked peas, blanched
  • 3 TBS butter
  • 1 TBS mint, chopped
  • TT sea salt, ground pepper and coriander

Method:

Place potatoes in pot with salt and water(BRINEY) and bring to boil; cook for approximately 15 minutes or until just tender; remove and place in a bowl; toss with spices and set aside.  Meanwhile sauté fresh shelled peas in butter quickly to heat up; add mint; toss to combine and add to potatoes and serve immediately.
