Both nasturtium flowers and leaves are edible as long as you don’t use pesticides. They should be washed before using. Leaves wash like watercress, cold water rinse and spin dry. Wash the flowers in gentle stream of cold water and drain on paper towel just before serving. This plant is related to the cress family and as such they give a peppery punch similar to watercress in salads and pasta dishes. We use the flower for decoration for our summer salads and grilled dishes, and the dehydrated flower pedals make a peppery spice rub to use on the exterior of a creamy goat cheese.
