PASTA WITH CLAM SAUCE assembly

Ingredients:

  • 3 TBS EVOO

  • 3 TBS shallots, minced
  • 1 head garlic, paste
  • 1 TBS anchovy paste
  • 1 tsp red pepper flakes
  • 3 cups clam sauce, see recipe
  • 2 dozen clams, optional
  • 1# cooked pasta, see recipe
  • ¼ cup parmesan, finely grated
  • 3 TBS parsley, minced
  • *Crisped pancetta and provolone picante to garnish

Method:

Place oil in a large sauté pan and heat over medium flame; add shallots and garlic; cook 1 minute; add anchovy and pepper; cook an additional minute to dissolve anchovy; add sauce and heat through; if using, add clams and cover to cook 5 minutes; toss in pasta and cheese; heat throughout; plate and garnish with parsley and pancetta/provolone if using.
