PEAR TARTE TATIN

Ingredients:

  • 2 ½ ounce butter

  • 1/3 cup brown sugar
  • ¼ teaspoon cinnamon
  • dash of sea salt
  • 1 Tablespoon heavy cream
  • 6 pears, peeled,halved, sliced lengthwise
  • 1 sheet puff pastry dough  (purchased or homemade)

    OR one pie crust

Method:

Combine butter, sugar, cinnamon, salt and cream in sauté pan; cook on medium heat to dissolve sugar and create a caramel; remove from heat and place in large muffin cups; place pears, core side up into caramel; place a piece of puff pastry cut into a circle to cover/fit over the back of the pears; bake at 390ºF for approximately 20 minutes or until the pastry is puffed and golden; remove and let stand 5 minutes; invert pan onto serving plate.
