PETITE FILET OF BEEF

Ingredients:

  • 4-6 filet of beef, 4-6 ounce

  • 1 tablespoon coarse sea salt, Blue Sky from EVOO CBCS, signature salt
  • 1 tablespoon black pepper
  • EVOO, as needed
  • 1 cup Gorgonzola, crumbled

Method:

Rub each filet generously with salt and pepper. Drizzle with EVOO to moisten. Let stand 10 minutes at room temperature before grilling.  Meanwhile heat indoor grill pan and brush with oil. When heated, place filets on hot grill and cook 3 minutes then turn and finsh cooking 1-2 minutes or to desired temperature.

Alternative: serve with Gorgonzola sauce:
2 tablespoon mayonnaise
1 teaspoon Dijon mustard
1/2 cup Gorgonzola cheese
1 tablespoons EVOO, as needed
Blend mayo, mustard and cheese in blender using pulse. Drizzle in EVOO as desired. Spoon over steak.
