PICKLED CHERRY TOMATOES

Ingredients:

  • 2 quarts cleaned cherry tomatoes, whole
  • 1/4 cup salt
  • 1 quart ice
  • 1/2 -1 cup sugar
  • 2 1/2 cups white or cider vinegar
  • 1 1/2 teaspoon spice of choice (dill, whole clove, mustard seed, red pepper flakes)

Method:

Place clean cherry tomatoes into a stainless steel or glass container with salt and cover with ice; leave at room temperature for 1-2 hours, which by that time they will be frozen.

Meantime in saucepan, bring sugar, vinegar and your choice of spices to boil. Set aside.

Drain water/dry melted ice from bowl of cherry tomatoes. Without rinsing salt from the tomatoes, add to the hot vinegar & spice mixture to the bowl over the tomatoes for 3-5 minutes and until tomatoes warm up a bit.

Remove tomatoes to dry very clean bowl or jar and chill before covering.

Keep refrigerated until needed. Drain to serve.
