PINE NUT TART (Fr Laundry inspired)

Ingredients:

  • 10 oz pine nuts

  • 1/3 cup sugar
  • 3 cups AP flour
  • 8 oz butter, room temperature
  • 1 large egg
  • 1 tsp vanilla extract

Method:

Crush nuts in bag with mallet; place in mixing bowl with sugar and flour; add butter, egg and vanilla; mix to incorporate; preheat oven to 350ºF. Generously butter and flour tart pans and refrigerate; remove and press dough into
pans; bake for 5-8 minutes, until golden brown, remove and cool.
