PIZZA SAUCE, NAPOLI STYLE

Ingredients:

1 28-32 ounce can San Marzano tomatoes or similar
1 teaspoon salt
3-4 tablespoons EVOO, to taste

Method:

Hand-crush the canned tomatoes into a saucepan along with juices. Stir in the salt and EVOO.
Simmer until thickened, about 15 minutes.
Let cool to room temperature before using. Or refrigerate until needed, but bring back to room temperature.
