POACHED DUCK EGGS

Of course you may substitute chicken eggs for duck eggs.

Ingredients:

  • 2 quarts water

  • 1 teaspoons white vinegar
  • 4 each duck eggs

Method:

Bring water to a simmer and add vinegar. Crack eggs onto saucer, one at a time, and lightly place each egg into water. It should settle and as it begins to coagulate, gently lift off bottom without disturbing. After 3 minutes, lift egg out of water and remove any extraneous whites. Place into ice cold water (without ice) and hold until service. At service, bring pot of water to simmer. Drop eggs into water and remove after 1-2 minutes when they are hot.
