POTATOES, SALAD

By:


1/2 gallon water
1 1/2 Tablespoons coarse salt
1 pound potatoes, fingerling or other, sliced 1/4” or quarters, small wedges
1 recipe red wine vinegar dressing

METHOD
Bring water and salt to a boil; add sliced potatoes and cook for approximately 10-12 minutes until “just” tender. Remove to a bowl
And toss on red wine vinegar dressing. Remove to refrigerator to cool for service OR serve warm.
