PRESERVED LEMON-TOMATO VINAIGRETTE

Ingredients:

  • 1 cup dried heirloom tomatoes*, crumbled

  • ½ cup EVOO
  • 1 tsp balsamic vinegar
  • 1 tsp preserved lemons, minced
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 1 TBS parsley chopped

Method:

Place tomatoes in a large bowl and cover with boiling water; place plastic wrap over bowl and steep for 30 minutes; drain off water and add remaining ingredients; adjust seasonings and reserve.
