RAINBOW CHARD

INGREDIENTS

1 bunch rainbow chard, de-stemmed and washed
1-2 tablespoons EVOO
Salt, pepper and other seasonings to taste
METHOD
Pre-prep: Clean greens under the faucet; on a cutting board, cut into desired size pieces; chop the stems in 1/2 inch lengths. In a saute pan on medium high heat add the EVOO and stems; saute until stems are al dente 3-5 minutes. Add the greens when the stems are tender to the tooth (meaning a little firm) and saute till color is set and greens are tender, 1-2 more  minutes. Taste for doneness and cook longer or adjust seasoning only if needed.
