RHUBARB AND SWEET BALSAMIC RELISH

Ingredients:

  • 4 stalks rhubarb, 1” dice

  • ¼ cup sugar
  • ½ orange, zested
  • ½ cup water
  • 4 stalks celery, diced    3 Tablespoons balsamic vinegar
  • 3 Tablespoons tarragon
  • 3 Tablespoons parsley chopped

Method:

Place rhubarb in medium bowl; place sugar, zest and water in a medium sauce pan and bring to a boil; pour boiling mixture over rhubarb and allow to sit for approximately 1 hour to become tender; chill for service.  At service add celery, balsamic and herbs; toss to combine.
