ROASTED TOMATO-FIG MOZZARELLA SALAD

Ingredients:

  • 1 pound cherry tomatoes (fresh in season)

    1/2 pound fresh figs (in season), washed and quartered

    2 Tablespoons EVOO

    1 teaspoon coriander

    1/2 teaspoon coarse sea salt

    1 pound fresh mozzarella cheese, sliced about 1/2 inch

    1/2 bunch fresh basil, whole leaves

Method:

Set oven to350F. On separate pans, scattered fresh tomatoes and quartered figs. Drizzle each pan with EVOO and sprinkle with coriander and salt. Place into oven and roast until skins on the tomatoes shrink and wrinkle, about 20 minutes, and figs are slightly caramelized, about 12 minutes. Remove and cool completely at room temperature, 30 minutes. Cut mozzarella and layer on plate. Pour cooled fruits over mozzarella slices. Garnish with basil. Serve.
