SAUCE, BREAD SAUCE

By:

An Italian favorite, born of the tradition to never waste bread, this sauce is so much better than the idea of it sounds. To make it more generally appealing perhaps we should just call it a cream sauce. What do you think?

Ingredients
1/4 cup soffritto of onion and garlic, slowly melted but not browned
1 1/2 cups milk, whole
1 tablespoon orange infused olive oil
1/2 teaspoon each sea salt, ground coriander, and black pepper, blended
1-2 slices day old Italian style country loaf bread,  crust removed
1/4 cup Mascarpone cheese

Method
Place soffritto, milk and oil in a small sauce pan.
